Spread butter on microwave dish. At Medium HI, cook until melted for 45 seconds. Then add coffee,
sugar and egg and mix well with butter in the microwave dish. When stirred to perfection, add the other ingredients and whisk until smooth. Prepare an 11 x 14 inch of cardboard covered with wax paper. Pour 16 teaspoon drops of butter. Then place on heat at HI for 2 1/2 to 3 minutes. Remember to move the cardboard around in half while cooking. When cookies are baked and done, remove it from the dish to cool. Repeat the procedure with other mixture. With this microwave recipe, you can yield 4-5 dozens of Raisin Spice Drop Cookies.
